56.  Learn to make falafel

Tonight’s dinner was delicious.

I was really happy with the falafel recipe I found, after a few modifications.

We enjoyed the falafel as a wrap. A whole wheat tortilla with lettuce, tomatoes, cucumbers and vanilla yogurt as the sauce complimented the falafel nicely.

Mmm, definitely a repeat.

The dinner was particularly fun because I got to enjoy it with Clark . . . so happy to see him after being up in Montana all week (I’ll be blogging the details soon).

I think it would be fun to do.
Yeah, I was SO tired when I got home . . . part way into the falafel process, I wondered why I had decided to make dinner . . . crazy for sure :) .
